This is a fully remote position, open to applicants in United States.
• Validate cumulative lethality and time-temperature models against established scientific principles.
• Establish suitable log reduction targets for poultry, beef, and pork products, encompassing both ground and whole forms.
• Assess D-values, z-values, and determine if carryover cooking contributes to food safety.
• Analyze customer-facing safety language such as “Safe to Eat” and “Pasteurized.”
• Provide guidance on launch readiness and pinpoint areas that require additional attention.
• An advanced degree in Food Science, Food Microbiology, Meat Science, or Thermal Processing.
• Familiarity with USDA-FSIS Appendix A and FDA Food Code.
• Understanding of the lethality kinetics of Salmonella and E. coli.
• Practical experience with HACCP.
• Knowledge of meat and poultry manufacturing processes.
• Capacity to simplify complex food science concepts for home cooks and legal teams.
• Prior experience in consulting or product advisory roles.
• Ability to deliver straightforward, evidence-based recommendations.
• Short-term consulting opportunity.
