This is a fully remote position, open to applicants in Florida.
• Oversee adherence to nutrition and food service policies and procedures within the Department.
• Offer technical support related to nutrition and food service.
• Execute on-site inspections of regional operations.
• Supervise compliance with therapeutic diets, meal preparation, meal service, and address operational challenges.
• Ensure that the Department's Master Menu and Therapeutic Diet Menus align with Dietary Reference Intakes set by the Food and Nutrition Board of the National Academy of Sciences.
• Provide clinical expertise for updates to nutrition-related procedures and manuals.
• Act as a liaison between food service and health service personnel.
• Evaluate and recommend medical nutrition therapy.
• Inform senior management about program-related issues, challenges, and policies.
• Deliver technical assistance, training, and guidance on menu planning, nutritional practices, food safety, and sanitation.
• Collaborate with Department staff to formulate solutions to issues.
• Compile monthly reports on diet compliance, schedules, facility evaluations, correspondence, and work projects.
• Oversee diet prescriptions and work with Health Services to ensure proper diets are assigned.
• Design and assess specialized diets in accordance with medical nutrition therapy guidelines and the Department of Corrections Diet Manual.
• Perform additional duties as needed.
• Official transcripts will be necessary if a college/university degree is provided and the candidate is selected.
• A valid driver’s license is required.
• Nutritionist roles necessitate registration with the American Dietetic Association as a Registered Dietitian (RD) and licensing in the State of Florida in compliance with Chapter 468, Part X, Florida Statutes, or eligibility to practice dietetics under Chapter 64B8-40 to 45, Florida Administrative Code.
• A Level 2 background check must be successfully completed prior to starting employment.
• Must be a U.S. citizen or authorized to work in the U.S.
• The Florida Department of Corrections does not currently provide H-1B Visa Sponsorship.
• Preferred: experience in monitoring and assessing menu preparation and service in an institutional context.
• Candidates eligible for Registered Dietitian status must perform duties under the supervision and approval of a Registered Dietitian Nutritionist; practice parameters are restricted until fully registered.
• Some overnight travel may be required.
